Baby Cauliflower
For all I know, the colors in these cauliflower are completely artificial, but they look beautiful. A friend served these cauliflower for dinner the other night, each head the size of a racquetball. The color held up well to roasting and they tasted like, well, cauliflower.
[Update: Per the helpful comments below I've now learned that the colors are achieved through cross-breeding and result in cauliflower higher in beta carotene. Pretty and good for you.]

Those things are about $3.50 a piece at the new Kapahulu Safeway. That is a lot for a little cauliflower!!!

I'll have to say that they certainly remind me of spring...and hmmm...Easter? Nothing wrong with color in your food but I was wondering if you simmered/steamed them in vegetable juice...for instance carrot or beet, if the resulting hues would rival that of these babies. $3.50 a piece sounds a little steep, unless of course, you're the honored guest at a dinner party! ;-)
then again, everything is pretty expensive at the new safeway!
Wow, I had no idea they cost that much! I'm not sure I would have bought them myself.
I happen to have leftover beet juice on hand right now. I'll have to pickup a batch of boring white cauliflower and see how well I can do at color my own.
Apparently, these cauliflower are derived through selective breeding and may be healthier that "plain" white cauliflower. See the link below.
