Lychee Ice Cream
No matter where your climate, this simple ice cream using canned lychees brings the taste of the tropics. I've made a fresh version of lychee ice cream before, but this recipe can be made year round.
Lychee Ice Cream
Serves 6-8
- 1 20oz can lychees
- 1 pint heavy cream
- 1/4 cup sugar
- juice from 1/2 lime
Drain the lychees, reserving their syrup. Coarsely chop the lychee then combine all ingredients including the reserved syrup. Freeze according to the directions for your ice cream maker. Simple, eh?
I almost never, ever buy ice cream in the store, but for some reason I'm crazy about making it. A light ice cream or sorbet is often the perfect way to cap a good meal. Here are a few of my past recipes:

Hmm...I have an ice cream maker that I was so excited to get and only used once! So sad! I wonder if I can find these fruit here in FL...

Amelia, just check the Asian section of your grocery store. There's a reasonable chance they have canned lychee. If you make it, please let me know what you think.
James, an ice cream maker isn't strictly required. I think I'm going to write up how to make ice cream with nothing more than a bowl and a measure of determination.

I like that your recipe does not involve pasteurizing eggs! Plus it will be fun to try lychee fruit again, not something we Midwesterners eat everyday.

On a personal note, we have the most snow here since 1971, so many of us are dreaming of Hawaii and delicacies like lychee ice cream!
