Knife Sharpening in Honolulu?
Where do people go to get their cooking knives sharpened? I've always taken mine to PowerEdge, but the sharpener there is out of town for most of August. At this point I have soup spoons that are sharper than my chef's knife. Something must be done. What other options are there?
I've known anyone to take a knife someplace to have it sharpened. We always did our own, and I assumed everyone else did too. Other and speed and convenience, is there a reason to have someone else do it?
Topher, people commonly sharpen their own hunting knives, etc , but it's not unusual for cooks to have it done by someone. I remember when I worked at a restaurant, the knife guy would stop by every few months and that was the ONLY time the cooks let their precious tools out of sight. There are two levels of sharpening. Honing the edge on a sharpening steel happens all the time. I do that part. On a periodic basis, knives need a more thorough sharpening on a grinder or whetstone. I like to have that part done by a pro. Part of me doesn't trust myself not to trash my precious knives :)
I took my three Wusthof knives to PowerEdge to have them sharpened after reading your post about them here. I've always been hesistant to have my knives sharpened because I haven't been willing to trust that the place I bring them will do it correctly. It's impossible to know whether they actually know how to sharpen knives, or whether they just have a high school kid run them through a grinder in the back room. After calling PowerEdge earlier this month and being told they were sharpening knives again, I took the bus all the way over there to be told upon arriving that, no, they aren't actually sharpening knives again yet. So, last week I called again and was assured they were really sharpening knives now. I dropped my knives off, and to my chagrin they had them for more than a week. How long does it honestly take to sharpen three knives? Once I got the knives home and got a closer look at them, I realized that they had just ran my $70 serrated bread knife through a grinder, and ground off all the serrated scallops down to flat dull nubs. This is my own fault for stupidly assuming a store that sells knives knows how to sharpen them. This makes me so angry.
